If you've already been at Rick's you must have noticed this salad on the menu as it's been a signature dish since the opening. Kathy handed the recipe to the Chef right at the beginning and it has remained a favorite since then. The recipe is pretty straight forward so the key here is good quality ingredients and for the figs you better pick them out carefully so that they're fresh, soft and sweet in the inside.
Preparation time : 20 minutes
Serves : 4
- 1/2 pound soft, log-shape goat cheese
- 8 fresh fig
- 2 handfuls arugula
- 4 leaves red leaf lettuce
- 16 fresh basil leaves, cut in ribbons
- 1/2 cup olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons lemon juice
- 2 teaspoons honey
- 2 pinches salt
- 1 pinch pepper
Divide the goat-cheese log into 12 slices. Cut the figs lengthwise into quarters. Prepare the dressing, whisking together all ingredients. Wash and dry the arugula and lettuce and tear into pieces.
Place the salad greens, red lettuce first then the arugula over top. Around the lettuce, alternate the goat cheese medallions with the figs, then drizzle the dressing over all. Top with basil ribbons.
If you can't find fresh figs. you can soften dried figs by simmering them for 30 minutes in a marinade of 4 parts water, 2 parts balsamic vinegar and 1 part honey
